Nucleation. Like the Mentos it gives the bubbles of CO2 a place to form on the crystal structures of the NaCl. But unlike Mentos the salt clumps it's surfaces and are they are not uniformly exposed to the coke as much as the entire surface of the Mentos and thus the overall reaction is reduced along with the pressure by gradually reacting as the surface layer of salt reacts with the coke and then the next layer and so on unlike the Mentos instant and rapid reaction the NaCl goes longer and slower as the salt dissolves into the coke.

The chemical reaction between water and sodium (salt) is kinda like this, sodium ignites when it comes into contact with water but salt is less powerful than raw sodium but the consistency of the coke is foamy and carbonated and if it starts to steam it will be trapped under the foam and cause the foam to be released. That's just my hypothesis

The reason why this reaction happens is because salt is basic because it is a compound that involves sodium and the coke is acidic because it contains carbonic acid, so in short when an acid and a base is mix it releases carbon dioxide that causes it to foam up and shoot in the air, this same reaction happens when you mix bi carb soda with vinegar

This also works with sprite. I put salt in my friends sprite when I was in high school at a summer camp and I had no idea it would do this until it started to spew out the glass.
