Thanos use the mind stone three times actually... They are:
1. When he snap (To Wipe out half of life)
2. When he destroy the stones
3. If you pay attention to the Fight between Captain Marvel and Thanos in Endgame, we can see that Thanos use the Mind stone to know captain marvels weakness and thus take the power stone and use to punch her....
