If you pay close attention to it in Thor ragnarok you can see that it was right handed, but if you rewatch infinity war you can see that it is on thanos’s left hand.

Some other theories say that odin got all stones except the soul stone. When he went to get the soul stone, he learned that he has to sacrifice someone he loved, means he had to sacrifice hela. That might have changed his heart. But hela didn't know this, so she went against him and he imprisoned her.

Odin in mythology is a basically a collector of artifacts related to ragnarok

He's Stronger than the Stones and he has held the stones. My Source -
Among the 9 realms he comquered and stole weapons of mass destruction is the frost giants with the tessaract cube (space stone) and the elves dark blood (reality stone) and then there's loki's magic spear with the Mind Stone in it. (3/6).
The remaining 3 has the Time stone (guarded by magicians & although conquered earth, he never got his hands on it, (considering him & hela's killing spree, the guardians may have hid themselves. 50/50 chance that odin would have somehow won against the time stone as well.)

All that remains is the Impossible Soul stone & Power Stone that starlord found.

Of the 5 possible to gather infinity stones, he won against 3 of them and took them from their races. 2 remained hidden from any public knowledge.

Only problem I see with this logic is that the Reality Stone(Aether) was in the possession of the Dark Elves during Odin's father Bor's lifetime and hidden away on a secret planet before his death. If Odin sought the Reality Stone out to wield all of the Infinity Stones it would make for a wildly large plot hole that his father let him know this secret location.
