Thanos technically used the mind stone because that's the stone he sent Loki to earth with to get the space stone in avengers one.

The Mind stone’s main purpose is simply to give you better control over the power of the other infinity stones, as well as grant you its intellectual capabilities. So technically, Thanos is always using the mind stone.

Edit: When I said he’s always using the mind stone, I mean when it’s in his gauntlet it’s always in use. Secondly, its absence doesn’t mean Thanos can’t use the other stones, it just gives him a better range of what he can do and how easy it is to do it with the stones.

In case u didn't know the power stone was used to fuel the snap, the space stone was used so that the snap happened everywhere, the time stone so it would happen around the same time, the reality stone to change the bodies to dust, the soul stone to truly kill them by taking the soul, and finally, the mind stone so that he could choose what the snap would do.
