Quick and Easy Greek Cos Lettuce Salad (Maroulosalata)

Easy Greek Cos lettuce salad (Maroulosalata, μαρουλοσαλάτα)

This is a lovely fresh salad that I have eaten when staying with my sister in Crete.

In the market there you buy the lettuce, dill and spring onions as a bundle, you only have to make the lovely dressing to go with it!

Ingredients
1 cos lettuce
75ml Olive oil
25ml red wine vinegar
1 tsp dried oregano
5 spring onions, cleaned and finely chopped
1 small handful of fresh dill, roughly chopped
salt and ground black pepper

Method
* Wash the lettuce, removing any damaged leaves and the thick stalks. Dry the lettuce well.
* Shred the lettuce, add the spring onions and dill and refrigerate for 1 hour
* Shake the oil, vinegar, dried oregano, salt and pepper together in a jam jar
* Pour over enough of the dressing to coat the salad.
* Toss well and serve
