I love all kinds of cheeses and breads but there's just something comforting and nostalgic about American cheese and white bread in a grilled cheese.
Add some tomato soup and it's perfect.

Lisa, have you ever tried cream cheese grilled cheese?
Just add dill, chives and onion powder to soften cream cheese and smear it on bread and grill normally. Or make it a dessert grilled cheese by sweetening the cream cheese with some sugar and mixed berries.
Or Brie and fruit preserves? I like apricot, strawberry or plum preserves.
I'd like to see you make these, too.

I grill mine with chili oil and mayo on the outside. The heat gives the chili oil a deeper flavour
