Ingredients for 2 people
-1 cup cooked brown rice (according to packet instructions)
-Kale, stems removed and chopped, a couple of handfuls
1 tablespoon lemon juice, 2-3 teaspoons olive oil, and salt (to massage kale)
-Cherry tomatoes, 100g (3.6 ounces)
-Red cabbage, 75g (2.6 ounces)
-Spinach, a couple of handfuls
-Alfalfa sprouts
-1 avocado
-Frozen edamame, 1 cup
-1 chicken breast seasoned with salt, pepper, olive oil, and dried oregano
-1 tablespoon olive oil (to cook chicken)
Choice of nuts, seeds (such as pepitas and pine nuts)
Spring onion for garnish
Dressing:
-4 tablespoons Lemon juice
-3 tablespoons Honey
-4 tablespoons Dijon mustard
-1/4 teaspoon Garlic powder (or 1 clove of garlic)
-1/4 teaspoon salt
-Ground black pepper
