Nourishing Chicken Power Bowl

Ingredients:
💚 8 Organic Chicken Tenders Breast
🥬 2 cups Organic Spinach & Spring Mix
🍠 1 large Purple Sweet Potato.
💚 1 Organic Squash.
🥒 1/2 English Cucumber.
🌱 Handful Organic Micro Greens.
💚 4 tsp Organic Paprika (use half for chicken & half for veggies)
🧂 1 tsp Real Salt (use half for chicken & half for veggies)
💚 Pepper to taste

Greek Yogurt Dressing:
💚 1 cup Organic Greek Yogurt.
💦 1/4 cup Water: Adjusting the consistency to achieve the perfect drizzle.
🍎 2 Tbsp @northcoastorganic Apple Cider Vinegar
🍎 2 Tbsp @northcoastorganic Apple Sauce
🥑 2 Tbsp Avocado Oil
💚 2 tsp Organic Dijon Mustard.
🧄 1-2 Garlic Cloves, Minced.
🧂 1/2 tsp Real Salt,
❤️‍🔥 1/2 tsp Cayenne Pepper.
💚 Pepper to Taste.

Let’s Cook 👩‍🍳:

1️⃣ Preheat your oven to 400°F.
2️⃣ Slice the sweet potatoes and squash into rounds.
3️⃣ Place the sliced veggies on a baking sheet lined with parchment paper. Drizzle with avocado oil and sprinkle with paprika, real salt, and pepper to taste.
4️⃣ Roast the veggies in the preheated oven for about 20 minutes for the sweet potatoes & 12 minutes for the squash.
5️⃣ While the vegetables are roasting, bake the chicken tenders in the oven at 400°F for approximately 15-20 minutes, or the internal temperature reaches 165° F.
6️⃣ In a cup or mixing bowl, combine all the Greek yogurt ingredients. Whisk until the dressing is smooth and velvety.
7️⃣ Assemble your power bowl by layering the mixed greens, roasted vegetables, cucumber slices, and chicken tenders in a deep bowl or serving platter. Top with micro greens.
8️⃣ Drizzle the homemade Greek yogurt dressing generously over the top.
9️⃣ Enjoy.
