Spaghetti Alla Carrettiera, also known as Sicilian-Style Spaghetti Alla Carrettiera, is a simple and delicious 15 minute meal made from just few simple ingredients. A traditional southern Italian pasta dish tossed with fresh garlic, fresh tomatoes, olive oil, and topped with grated pecorino cheese.

Ingredients for 4 servings:
1 1/4 pounds (566g) plum tomatoes (about 5 tomatoes)
12 oz (360g) dried spaghetti
1/4 cup (60ml) extra-virgin olive oil, plus more for drizzling if needed
1/4 cup loosely packed, roughly chopped fresh basil leaves
3 medium cloves garlic, finely minced
1 large pinch red pepper flakes
salt to taste (for season and pasta water)
grated pecorino cheese (romano) or ricotta salata
(optional) 1/2 cup (35g) lightly toasted breadcrumbs

Directions:
With a sharp paring knife, core, and score a shallow
1-inch size “X” on the bottom of of each tomato. Cut just enough to pierce through the skin.
Bring a large pot half full of water to a boil.Add the scored tomato and blanch in the boiling
water for about 40 to 60 seconds, or until the skin will start to separate from the flesh.
After about a minute, with a slotted spoon, remove the tomatoes and immediately submerge them in a ice water bath to halt the cooking.When the tomatoes are cool to the touch, peel the skin off and cut in half, and then dice them into small cubes.
Peel, and remove the internal garlic germ, will make the raw garlic more digestible. Once done, finely chop the garlic cloves, the parsley, the basil. Add olive oil, basil, garlic, and red pepper flakes.
Stir well and season with salt to taste. Set aside.In a pot of lightly salted boiling water, cook spaghetti, stirring frequently, until al dente. When pasta has almost finished
cooking, add few tablespoons of cooking pasta water to tomato mixture and whisk to combine.
Using tongs, transfer pasta to tomato mixture along with additional cooking pasta water if needed. thoroughly toss and stir to combine sauce and pasta. Add half of grated cheese and toss to combine. The pasta should be well coated. If it seems a bit dry, add a tablespoon of pasta water and olive oil until it reaches the desired consistency. Taste for seasoning and transfer the pasta to plates and sprinkle with the remaining grated cheese. and, or, lightly toasted breadcrumbs, if desired.
Serve right away.
