Hope you enjoy this super quick and easy method for making quick pickled onions! No sugar, no salt, and no need to boil anything! WFPB and healthy, I love these on salads, burgers or in wraps. Enjoy!

Quick Pickles:
Red onion, sliced (or any other veggie you'd like)
1 cup water*
1 cup vinegar (I use apple cider vinegar)
Any seasonings you like (peppercorn, whole garlic cloves, chili, fresh dill, fresh rosemary, etc.)
*The recipe amount can be increased depending on the size of your jar. Just use a 1:1 water to vinegar ratio to increase (i.e. 2 cups water + 2 cups vinegar).

Hi, Maddie! I finally gave this recipe a go after watching the video several months back. My onions are now sitting in the fridge in the ACV/water mixture, along with a few mustard seeds, bay leaf, a pinch of oregano, and some grinds of peppercorn. I plan on using this primarily in tacos, and I know they will be delicious. I enjoy all your videos, and I love your upbeat, down-to-earth personality. I have never made pickled onions before, if I had to know how easy they were to make I would have made them years ago, they are delicious and can be used on the side with many dishes

Preferences are dangerous, You must use 50:50 water and vinegar for long term safe "quick" pickles. You can rinse them off when you use them.

I pickle my onions the same way, but this isn't a quick pickle. This method usually takes around 24 hours for the pickle, otherwise it's more of a marinated onion...Either way, I'm sure they're delicious.

These are great when you're in a "pickle" and need them in a hurry! lol But when I have time, I like to add about 1/3 cup of liquid from another ferment (or just add a piece of cabbage to the top of the onions to introduce plenty of good microbes, or else you can buy a starter if u don't have either). Add whatever herbs/spices you like, pack it down, and add barely enough water to cover. Add a lid and seal tightly to keep air out, then just let them sit on the counter for a couple of days to ferment. Voila, Free probiotics and a happy gut microbiome😍. (If you let them ferment longer and aren't using an airlock, remember to crack the lid briefly once or twice a day to let the gasses out.)
