Ditch the 3-2-1 method and follow the method shown in the video. The 3-2-1 method will work sometimes, but not every time, if you have thin ribs, you'll probably over cook them using the 3-2-1, if you have super meaty ribs, it might not be long enough. So smoke to colour, wrap until they are tender then glaze at the end. I'll show you more in depth in the video.

We'll cover off the BBQ set up, cooking temperatures and the whole process from start to finish.

Nice vid mate, it's exactly the way I cook ribs too. One suggestion with removing the membrane (because it looked a bit difficult on that rack), is to get under the membrane from the centre of the rack, hold the rack down with one hand, then pull up with the other hand, so that both sides lift at the same time. Works really well.

Spot on about ditching the 3.2.1 method. It’s a good way to over cook your ribs if you are cooking at any temp above 225. Personally I think ribs should be smoked at 275 as you did. Two hours is too much time wrapped. Aim for bite off the bone, not fall off the bone. More like 2:1:1
