Welcome back to my meal kit series! ⏲️🍱🥢

Finally getting back to posting these, sorry it’s taken so long!
Today I’m sharing how I prep my Soondubu Jjigae (Korean Soft Tofu Stew) kits✨

Soondubu jjigae is a spicy, comforting, hearty stew. It can be made with pork, seafood, or just tofu and veggies for a vegetarian option!
It’s best served with rice and while it’s still hot and bubbly👌🏼🥰

Here are some q&as!

🔸How do you cook it from frozen?
In a heavy bottomed pot or Korean stone pot, start cooking the frozen pork in some oil on low heat, the meat should start loosening up as it cooks. Then proceed to add the rest of your ingredients and increase your heat. Finish by cracking in a egg and cook until it’s JUST set.

🔸Can these be frozen? If so, how long do they last?
I like to freeze these in airtight containers for up to 2 weeks, but we use them before it reaches 2 weeks.

🔸Is it okay to freeze tofu?
Yes! The texture can change slightly, since the tofu loses some moisture as it freezes creating extra little holes. But it actually soaks up all the yummy broth as it cooks, so it’s a plus for me. If it’s not for you, just add fresh tofu at the time of cooking.

🔸Does it have to be spicy?
Traditionally, yes! But if you don’t like the heat, you can omit the gochugaru (Korean chili flakes) and have a non-spicy version. This is what I do for my toddler and he loves it!

Let me know if you have any other questions if I missed some :)
