How to make a delicious No Bake Strawberry Mascarpone Cheesecake!! This dessert is super light and creamy. With a sweet strawberry jam layer at the top to add sweetness. A crunchy digestive base at the bottom this is the ultimate dream cheesecake.

Ingredients
BASE:
260g (3 cups) digestive biscuits
90g (3/4 cup) butter

FILLING:
250g (1 cup) mascarpone cheese
1/4 cup sugar (in mascarpone)
300ml (1&1/4 cup) double cream
3tbp sugar (in double cream)
1/4tsp vanilla extract

JAM:
Strawberry jam heated up a little til it’s loose then pour on top.

I like the look of the finished product.
Only downside was when you swapped from using grams to cups in the description.

Just made this again without the topping…feels like it is missing lemon juice to cut the blandness when the topping is omitted.
I’m not sure how much I should use though

3 cups of biscuits 3/4 cup of butter, you yanks and ur measurements are ridiculous!! 320 grams of biscuits and 150 grams of butter. thats not very hard is it!
