Do you want to learn how to make a Mascarpone Cheesecake from scratch? This is how it goes! This Cheesecake is so light in texture but rich in taste. The flavor of the Mascarpone Cheese is soft and just delicious. It pairs perfectly with its roasted almond crust which is odorant and so flavorful! This Mascarpone Cheesecake recipe can be made so quickly, but the definite hardest part is to wait for it to set xD This kind of cheesecake tastes really different from the traditional Cream Cheese Cheesecake but it is just as good even maybe better ;) It goes so well with any toppings, especially Strawberry or Blueberry Sauce! 📖 RECIPE

📌The Blueberry Sauce & the Strawberry Sauce

✅Ingredients (Mascarpone Cheesecake)
Crust
• 90g Almonds slices
• 70g Graham Cracker
• 20g Sugar
• 45g Butter melted butter
• Pinch of salt

Cheesecake
• 275g Mascarpone
• 475ml Heavy Whipping Cream
• 100g Sugar
• 10ml Vanilla Extract
• Lemon Zest ( Optional )

📖Instructions
1️⃣Cheesecake Crust
1. In a Food Processor put the Graham Cracker, the Sugar, and the Salt
2. Pulse until the Graham Crackers are in a powder
3. Add the Sliced almonds and pulse until they are in small pieces but not a powder
4. Put everything in a bowl
5. Add the Melted Butter and mix
6. Put the crust in your 9inch Springform pan
7. Press on it so it coats the bottom evenly
8. Bake at 350°F for 15-20min
9. Let it cool down completely

2️⃣Cheesecake
1. Mix Mascarpone, Sugar, and Vanilla until the texture is smooth
2. In another bowl, whip the cream until it gets stiff peaks
3. Fold in the whipped cream in the Mascarpone mixture
4. Pour into the pan
5. Even it out
6. Let it 8h in the fridge

3️⃣Revealing The Cheesecake
1. Cut a nice slice of your cheesecake
2. Eat as it is or garnish with your favorite fresh fruits, coulis, or topping
3. Enjoy :D

(Strawberry Sauce)🍓
• 300g Frozen strawberries
• 80g Maple Syrup
• 10ml lemon juice

(Blueberry Sauce)🫐
• 300g Frozen Blueberries
• 90g Sugar
• 15ml Lemon Juice

I made this for a group of fussy Italian eaters and everyone loved it!! I tweaked the recipe by adding Pistachio paste to it, calling it my Pistachio Mascarpone Cheescake...and OMG, YUM!! Add this to take it to the next level :)

Thanks for the recipe! It was delicious overall. Just a heads-up for anyone using cupcake paper cups like me: the crust can burn quickly. I baked for 8 minutes, and it got a bit too dark, so I'd suggest trying a max of 5 minutes instead.

No-one needs a food processor to crush biscuits! Just place the biscuits in a strong plastic bag. Seal it. Then have fun treading on it. Gives your feet a massage too. Double win 😊. Actually triple win cos when you tell your friends you are serving it to, it'll give them a really good laugh, AND they learn the fastest, easiest and definitely most fun way of crushing biscuits! So...Actually that's a quadruple win!

i'll have to give this a try. I love mascarpone but every time I bake with it, it seems to separates. Maybe its the whipped cream that keeps it together while baking?!
