Ingredients for Graham Cracker Crust:
1 1/2 cups graham cracker crumbs (from 12 whole crackers)
1 Tbsp granulated sugar
8 Tbsp unsalted butter (1 stick)

Ingredients for No-Bake Cheesecake:
8 oz cream cheese package, room temperature
2/3 cup granulated sugar
1 1/4 cups heavy whipping cream, chilled
12 oz mascarpone cheese, chilled
2 Tbsp lemon juice added 1 Tbsp at a time

Strawberry Cheesecake Topping:
8 oz Fresh Thin-Sliced Strawberries
1 Strawberry Sauce Recipe, strained and chilled
Fresh basil leaves for garnish, optional

I’ve been looking for a no bake cheesecake and tried this recipe. All I can say is this was the best recipe I have found. It’s delicious, easy and great for any occasion. Highly recommend for ANYONE

Hello Natasha. I made your No Bake Cheesecake Recipe yesterday and it was amazing. I tweaked the recipe only making minor changes to get more servings.
I used two 8 oz packages of Cream Cheese, added 2 8 oz packages of Mascarpone Cheese, 1tbsp of Vanilla flavor, 1 1/2 Cups of Whipping Cream, and another 3rd Cup of sugar. I think the real game changer is using Biscoff Biscuits in place of Graham Crackers💥💯. That really took this cake over the top. Thank you so much for your incredible recipes, every one I've tried was on point.

Mine is in the freezer as of now, and I am ABSOLUTELY ready for it to be done.

I made 3 VERY slight changes, but did not substitute ANY ingredients. I used what she said in the video.

1) I added around 1 1/2 tablespoons MORE of lemon juice (around 3 1/2 total),

2) I used a full cup of sugar instead of 2/3 cup.

I promise you guys will thank me if you do that. The flavor POPS now. It has that satisfying cheesecake flavor that you cannot get from a store bought cheescake.

3) My final change was that I whipped the whole mixture together until it was like a stiff velvet texture. I didnt gently fold it all together. I dont think this will make much difference though.

For anyone scared of the heavy cream making your mix liquidy, the main thing is to WHIP the heavy cream (aka whipped cream). It has to be whipped cream BEFORE you mix it with anything. If its not the texture of dense whip cream, you need to keep whipping it. It should hold shape at room temperature. And I know you can do it because I need a new hand mixer and so I just did ALL my whipping and mixing with a disposible plastic picnic fork (instead of metal so I wouldnt scratch the mixing bowl). It took about 15 minutes to turn it to whip cream with the fork.

I did try making this last night and it was very good。my husband love it. I just give it a little bit of twist. I used digestive biscuits and I put leaf jelly because I don’t have enough mascarpone cheese. I love it soft and creamy

I'm not usually a fan of no-bake cheesecake, but after making this recipe I was surprised at how good it was and that it looks like a cheesecake, not just a mixture of fruit, cream and graham. My husband also loved this recipe and said it's now one of his favorites. I will make it again soon, and will try it with a fresh blueberry topping. Thanks for a great recipe Natasha!
