I've over proofed and just kind of jiggled it back into the pan and baked it. It was okay, I'll be sure to do this next time.

Sometimes the things we think are mistakes just need a bit of critique to come out better than we intended. Life lessons are everywhere. They're in the acts of creating, destroying, and even in creation as it stands. You can learn a lot from just baking some bread.

I forgot to ad two thirds of the water for a loaf I was making in a bread machine, (I know not the same thing but it’s convenient) I noticed when it was over halfway through the process and was considering dumping it but decided to try and save it. I added the needed water, hand mixed it in and added extra time. It turned out better than the loaf I made properly. More time in the proofing process does wonders.

This is information that would have been useful yesterday. I made a loaf of bread today and let it proof too long. It was sticking to the foil I used to convey it and so got deflated when I removed the foil. It's a little sad and flat as a baked loaf, but if it happens again I'll try reshaping.

I once proofed a big loaf for five days in a big cambro container and then used a wuarter of that and three quarters fresh dough in anither normal proofing and it turned out amazing like you said.

My house is very cold during the winter, I put my loaf in the oven to proof just ok w warm setting and it works great, fell asleep once nice and forgot about it, woke up to pee in the night and remembered it, panicked and checked on it. It was huge, degased, shaped and put it in the fridge as normal, turned out great

A few days I over proofed during bulk ferment and the starter ate so much of the gluten, I can to add eggs, fat and sugar to them it into a pretty good pancake
