I find that adding EVOO (extra virgin olive oil) at the table to my sauerkraut and kimchee makes it taste less sour and salty. I am making sauerkraut now and like to add fennel and raw beets to the cabbage.

In indian cutlures ; veggies are fermented with loads of herbs and spices. We call those achaar. In our culture, depending on the season achars are made and consumed. From green chillies, garlic, ginger to raw mangoes, anything one can imagine. An Indian house have at least 4-5 types of achaar in their kitchen that's eaten in small quantity with meals.

I eat almost every day bio not pasteurised sauerkraut here in Switzerland 🇨🇭never had any issues with my bowel it’s the best for your stomach and the Vitamine C amount is also very high !

Just tried sauerkraut for the first time today. I like the tang. I have some serious auto immune issues going on so I’m hoping this will help. Going to give this a good run of a month or so.

I'm a German Hungarian want to try something really good? Try this. This is for one serving so adjust as necessary. Take half of a large onion and diced to small pieces. Saute in 3 to 4 table spoons of extra virgin olive oil. When onions become slightly soft, add a piece of smoked sausage that is sliced up saute until the onions and the sausage are slightly browned. Remove from Heat and add 1 1/2 cups of raw organic sauerkraut. Add 2 tbsp of bright red paprika, and 1 tsp of smoked paprika return to heat for just a few moments to stir ingredients together just a heated up don't leave it on for too long not more than a minute or two otherwise you kill the bacteria. Enjoy with a good piece of German rye bread!

I was sensitive to smells as a kid so this one scared me as well as canned sardines lol, but maybe now I can appreciate it as an adult and give it another try

I love Sauerkraut, I often make it myself. The only problem is it affects my arthritis negatively. So much so I have had to give up all fermented foods. Fermented foods also include pickles and olives, even canned tomatoes.

And me as a german can say that the sauerkraut, for me, can't be too sour 😋
I also like the bitterness of greens very as dandelion fresh from the garden in a salad👌🏼

I prefer kimchi over sauerkraut. It has much more flavor and a kick. It just tastes better to me. I used to have itchy skin problem grown up and a friend recommended I try it. My itchy skin problem went away and never came back.
