I love the scene in the beginning because Junior was slowly going senile at this point, but Carmella's lasagna was so good that he remembered it distinctly.

My Italian mom always mixed her ricotta with an egg or two depending on how much cheese so it was easier to spread and helps a little with the weird texture :)
