be kind to yourselves 🫶🏻 welcome to a “productive” college week in my life filled with cottage cheese, baked oats, breakfast sandwiches and some wholesome reminders for you. also, if you have any cottage cheese recipes you want me to try I'm kind of on a roll hehe

Recipes
↪Cottage cheese pancakes
*Add some slices of banana while in the pan for some caramelized banana action
*cinnamon apple topping: chopped apples + 1 tsp coconut oil + cinnamon + 1/4 cup water in a pan for ~5 mins

↪apple cinnamon baked oats

↪cottage cheese waffles (i use this for pancakes too)
1 egg
½ cup oats
1/3 cup cottage cheese
½ banana
1 tsp baking powder
Spread: ¼ cup yogurt, 1 tbsp peanut butter, cinnamon

↪bruschetta cottage cheese toast
Rub garlic on sourdough
Layer cottage cheese
Topping: Tomatoes + balsamic glaze + basil

↪sweet + spicy cottage cheese toast
Layer on bread: avo, salt, cottage cheese, chili oil + honey

↪healthy banana muffins
(but i like this recipe more)

↪mushroom risotto

↪beef banh mi-styled bowls

↪baked feta pasta

↪peanut butter noods
Sauce:
1.5 tbsp peanut butter
1 tbsp soy sauce
1/2 tbsp rice vinegar
1 tbsp maple syrup
Garlic powder
Sriracha
Add choice of noodles + veggies + protein

↪crispy baked tacos
(i filled mine with beans + pulled pork filling instead of chicken)

always wondered why I got so stuck with Linda when there is thousands of other people doing wieiad’s but then I realized it’s cause of Linda. Linda the person. Not the food she eats. I’ve literally been watching Linda since she started and I just feel like a proud mum..that’s the only way I can describe it. Even in the beginning I could see she had immense talent in her editing style and she would go so far but seeing it all come to life feels so surreal! So proud of you for sticking through all of this I can’t even imagine how tough it must be at times to do social media especially through the avenue you do, but your account speaks for itself! Linda, you inspire me so much to actually start enjoying food, nutrition and life in general. I am currently at the hospital because of eating disorders, and I have to eat a lot just to be able to, you know, live. It's a very stressful time for me and your page is my comfort zone.
