Impossible Pie - Super Easy - Coconut Pie - The Hillbilly Kitchen

Impossible Pie – Crazy Crust-less Amish Pie – Super Easy. This is the easiest pie I have ever made. It takes less than 5 minutes to prepare. The hardest part is waiting for it to cool so you can eat it.

It actually forms its own crust as it cools. You can use any flour to thicken the pie, so it is very easy to make a gluten free variety. Because it doesn’t have a traditional piecrust, it is much better for diabetics and dieters with calorie, fat and carbohydrate restrictions.

This is truly a pie you can enjoy without feeling guilty about eating. It is an absolutely delicious pie with several variation possibilities.

Remember to put God first! :)

INGREDIENTS:

4 large eggs
1 cup granulated white sugar
1/4 tsp. salt
1/4 tsp baking powder
1/2 cup all-purpose or gluten free flour
2 cups whole milk
6 tablespoons melted butter - room temp
2 tsp. pure vanilla extract or 1 tsp. vanilla and 1 tsp. coconut extract
1 cup shredded coconut
Butter to coat baking dish

I made this pie today. It's great! Coconut cream pie is my favorite, but I don't like to have all the pie crust work and calories. This is such an easy recipe. The hardest part was waiting for it to cool. Thanks for all your cooking and lifting up of Jesus videos. May God continue to bless you.

I don't think I have seen any recipe you've cooked I haven't liked. Keeping God first in an insane world! He's my anchor.

I just saw your channel in the suggested videos. I’ve never heard of an Impossible Pie but because it looked like a Chess Pie and because you have ‘hillbilly’ (I’m from Louisiana) in the title I thought I would watch your video. When I saw your Jesus is Lord sign I was so thrilled at your boldness to acknowledge Him! It is so encouraging for Christians to see other Christians be open about their faith in Jesus as their Savior. You are a blessing! You inspire me. Reading the comments shows that many many people are touched by you. You are a great example of a Godly woman.

I've made a savory version in summer: with tomato slices, and fresh basil from the garden. Grated parmesan & garlic powder replace the sugar & vanilla. Impossible pie can be a quick & easy side dish, or light lunch, as well as a dessert.

I uused to make this in the "70's. Bisquick had a lot od "Impossible" pie recipes, that I never copied and they disappeared from the boxes. So happy to have this, like I tell my friends, YOU ARE A TREASURE. Thank you Miss Becky

I saw this video last night and made the pie this morning. It looked just like the video! We can't get Bisquik as we're in England. We're both diabetic and we love our British custard tarts. My husband flipped for this pie! He said he'd have this ANYTIME! We also have a loaf of your bread in the oven at this time, too. God bless you!

I love this pie and have been making it all my married life. I call it invisible pie because it disappears so fast. I would make it for my sick grandmother when she did not feel like eating. It reminds me of egg custard and she loved custard.

My Mom used to make this pie. GOD bless you for this journey down memory lane . Love and prayers sent for you and yours.

When I first saw this recipe it was on either a Gold Medal or King Arthur flour bag -- as near as I can remember the late 50's or early 60's -- they had several variations to it.(different flavors) they also came out with a pizza recipe that you poured a batter (a little thicker than cake batter) in a pan and carefully spread pizza sauce on it and added the veggies and cheeses you wanted and baked it - it was really good. In those days almost every bag of flour came with a long strip of recipes inside.

My Mom made this back in the 70’s. I hate coconut, so she’d bake me one without it. This and her Mountain Cobbler were two of my favorites. She could come home from work and whip these up for dessert after supper because my Dad had a huge sweet tooth. The Mountain Cobbler makes its own crust too. Thanks for bringing back precious memories of my Mom and Dad.

. . . you explain things in a very common sense, regular kind of way. I liked this vid a lot. I am a north Florida panhandle boy and you remind me of the smart, salt of the earth kind of people that live where I do.

Love your channel and thank you for being yourself and not putting on the dog, so- to-speak. I just about get sick when people talk fake, talk through their nose, etc. Oh I love real!

I was sitting here in Pennsylvania yesterday, and saw this video come up. My grandmaw (full blooded Pa. Dutch, by the way) used to make two of these for every holiday. I had the ingredients, so i went on and made one. Well, last night, my sons band had practice. Those boys thought this was the best thing they had ever tasted 😊 there was a few slices left, but when i went to get one just now, all i found was an empty pie plate! I love watching you cook. Ill be making your broccoli cheddar soup tomorrow. Thanks for all the wonderful comfort food recipes. I will keep watching!

My mom used to make it a lot. I have always loved it, and when she passed, I started making it as well - I use Bisquick in there rather than flour ☺️ Lord bless you!!!
