This is the easiest pie you can make! Vintage Coconut Pie is sometimes called Impossible Pie or Magic Pie because it forms its own crust - NO PIE CRUST NEEDED! That is fabulous when you need a quick and easy dessert. This coconut pie recipe is so simple to throw together in just a few minutes. Try this vintage recipe and let me know if you like it!

Robyn on the Farm's Vintage Coconut Pie - Impossible Pie Recipe: 2 c cold milk 1/2 c (1 stick) melted butter 4 large eggs 3/4 c white sugar 1/2 c all purpose flour 1 Tbsp vanilla extract 1 c sweetened shredded coconut Pour all ingredients into a blender and blend for about 15 seconds. If not using a blender, mix until combined. The coconut pieces may be longer if you do not use a blender. Pour into a well greased pie pan and bake at 350 degrees for 50-60 minutes until set (mine took 55 minutes). Refrigerate at least 2 hours to completely set. Easy as pie! These are very good! My mother made them and so do I. I love all my cast iron too. I’m trying to find some of the old ones that are lighter weight than the new pans but they are hard to find. You don’t have to worry about iron deficiency if you use these. Sometimes the old ways are just better
