Impossible Coconut Pie with CookingAndCrafting

It's just one of those things you cannot explain, thus the "impossible" part of the title. This is a DELICIOUS coconut custard pie that makes its own crust. The lazy (wo)man's pie!

I got this off of Facebook, from Foodie TV

All the ingredients are mixed together and poured into a pie tin, but when it cooks it forms its own crust with filling. This has a coconut vanilla taste like a coconut cream pie.

2 cups milk
1 cup shredded coconut
4 eggs
1 teaspoon vanilla extract
1/2 cup all purpose flour
8 Tablespoon butter (I personally would half this next time--and it SHOULD be melted first)
3/4 cup sugar
1/4 teaspoon ground nutmeg

Directions
Place milk, coconut, eggs, vanilla, flour, butter and sugar in blender. Mix well.
Pour into a greased and floured pie plate. Sprinkle nutmeg on top.
Bake at 350 degrees for 45 minutes.

I just made this using coconut milk and gluten free flour because of my allergies and it is so good. Love it !!!

Haha! I was thinking - that was going to be a real challenge to get from the counter to the oven. I was curious about the lack of a crust, and I had NO idea it was going to make its own. VERY interesting recipe!

Delicious I'm guessing that the center remained like that because you used Macapuno with regular dry coconut. The Macapuno is thicker or heavier.

Oh! This looks so good. I have made this and other "impossible" pies with Bisquick and they all have come out tasting great. I even make quiches this way or anything like this I need quickly. Love the smiley face!!!

I make mine a little different. The first time I ever made It, I forgot to put the flour In. I like It so much better with out the flour.

It works best with dry coconut, melted butter and cooked a little longer to golden colour gets nice and crispy on top

MMM gonna have to try this. I LOVE coconut. And looks easy to make. Course I'll prolly have to add some more coconut lol. But I like LOTS of coconut in my pies and stuff.

Never overfill your pie pan! And, try softening or melting your butter first...makes all the difference, especially in its looks.
