I'm turning the tables, stepping out of the kitchen, and shining the light on my dad as he makes my Island Teriyaki Tofu Scramble recipe for the first time! It's a great vegan alternative to scrambled eggs for breakfast. Find the full recipe below. Enjoy :)
Teriyaki Tofu Scramble Recipe:
This fun cubed spin on tofu scramble has been a long-time favorite in my household. It's quick to whip together, thanks to the delicious Island Soyaki marinade that's easy to find at Trader Joe's and other grocery stores. Island Teriyaki works for this recipe too! This recipe serves 2-3 people.
Ingredients:
• One package extra firm tofu (12 oz)
• 2 tablespoons olive oil
• 1⁄2 yellow onion, diced
• 3 cloves garlic, minced
• 1⁄2 cup Island Soyaki marinade
• 1 teaspoon turmeric (spice)
• 1⁄2 teaspoon red chili pepper flakes
• 1 cup baby tomatoes, sliced in half
• 1 teaspoon sesame seeds (white or black)
• 2 stalks of green onion, thinly sliced, for garnish
Directions:
1. Drain tofu, pat dry with a towel, and slice into small cubes.
2. In a skillet, add olive oil and bring to medium heat. Add the onion and sauté until translucent, about 1-2 minutes. Add the minced garlic and saute for an additional minute. Add the tofu and all remaining ingredients except for the sesame seeds and green onion reserved for garnish, and stir-fry until all moisture is absorbed and the tofu cubes are lightly browned.
3. Plate the tofu scramble and garnish with sliced avocado and green onion, and devour!
