Crispy Taters
Step 1: harvest the potatoes you've been growing in your own backyard (or, if you're like me and a black thumb, buy a bag of taters). Wash well.
Step 2: dice the potatoes into small cubes.
Step 3: add the diced potates into BOILING water and let cook for 5 - 7 minutes.
Step 4: transfer the boiled poots into a mixing bowl. Add a drizzle of olive oil, one clove of grated garlic, and a generous pinch of salt. Make sure the potatoes are well coated - they should look like mashed potatoes.
Step 5: add the putins to the air fryer. Cook at 380F (193C) for 10 mins, shake, then cook at 400F (204C) for another 10 minutes.
Step 6: profit

If you add baking soda to the water it makes the outside even better. I also recommend making a garlic oil instead of putting garlic straight on them so the garlic doesn’t burn

I believe that boiling is one of the things they use to make sweet potato fries crispier instead of soggy and limp. The high penetrating temperature denatures the amylase iirc, preventing the amylase from converting starch into sugar

I made this with baby potatoes previously cooked in the oven that my grandma made today, I decided to turn them into this and I wish I could tell you how GOOD they were. Just olive oil, parmigian cheese, got a bread that was not that fresh but good enough to make bread crumbs out of it, oregano, a little bit of salt and pepper because they kinda had already. Pre heated the air fryer at 200 celsius, then got them in there of 10 minutes and it was CRISPY I loved them!!

Made these last night to go with a rotisserie chicken. Both my husband and I loved them. So nice to not heat up the oven on an 85F day but still have crispy roasted potatoes.

I was on a quest and imo Chef Johns are IT! You also have to parboil but a bit of baking soda in the water to make the outside of the pots a little craggy for more surface area.
Everything else the same.
They get SO crispy it’ll make your eyes roll back in your head and your family will say “HOW did you make these???”

I just love the way this recipe started...dig some new potatoes from the garden.... I miss doing that in my grandparents house where everything was cultivated, grown, raised, pickled, preserved and boy... were we the healthiest ever...
And those potatoes look yummy 😋
