If you can't get Duck fat, substitute by rendering chicken fat from chicken thighs bone in, skin on thighs. Some people won't try a recipe if they can't get an ingredient, the added bonus is you'll have chicken thighs to go along with the potatoes. Enjoy!

If any of you ever make potato au gratin/scalloped potatoes and have leftovers, cutting the leftovers into cubes and frying them like this works really well too! It’s a bit more cream/cheese flavor but you get a similar layered crispy potato texture :)
