8:11 I think the reason you need to add the garlic later is because it burns quickly. If you added it at the start, by the time the chicken is thoroughly cooked the garlic burns and becomes bitter. Hope it helps and great video as always!

I'm so happy more people are catching on to using carrots in red sauce recipes. A lot of sauces (that are affordable for us average population income households) are very acidic & need added sugar or baking soda to cut the acid but the natural sweetness from carrots helps with this a lot & chopping them really small makes them kind of just blend in with the mince

If you bought ricotta salata it's salted & aged longer so it has a texture really close to feta

I think you used Ricotta Salata (I hope I spelled it right.), which is a solid version of ricotta. It's more like Feta or Queso Fresco. You needed the tub of soft ricotta. But I'm glad it turned out for you guys. 😊
