2-Ingredient Pasta
Servings: 1

INGREDIENTS
1 cup shredded mozzarella cheese
1 egg yolk

PREPARATION
1. Add the mozzarella to a bowl and microwave for 1-2 minutes, until melted.
2. Allow the mozzarella to cool for 30 seconds.
3. With a spatula, gently fold the egg yolk into the cheese.
4. Turn the mixture out onto a parchment paper-lined baking sheet.
5. Place another piece of parchment paper on top of the dough and press down with your hand until thin.
6. Remove the top piece of parchment and cut the dough into thin strips.
7. Place the “pasta” on a rack and refrigerate for four hours or overnight.
8. Place the “pasta” in boiling water for one minute.
9. Drain into a colander and run cool water over the pasta to prevent sticking.
10. Serve with your favorite sauce.
11. Enjoy!

I'm tired of the "fat is bad" comments.
This recipe is designated for a Ketogenic diet (low carbs, high fats). Ask your doctor about it...or google shit. Whatever.

Ok, to all the people complaining that there is no flour, or that this his "high fat/calorie", let me explain something--- This is LOW Which means you DO NOT use starch! Starch is flour, potato, corn, rice, etc. So no, its not going to have flour. Get over it. Now as for the high fat/calorie thing.... You DO NOT count "fat" or "calories" on a low carb diet. You count CARBS. Low carb diets usually are high in fat and calories, but that doesn't matter because once again, that's not what you are focusing on, you are focusing on (say it with me, children) CARBS! Normally, your body burns sugar for energy. But when you switch to a low carb diet, your body starts burning FAT for energy. So the extra fat here won't really be a problem. Finally, people DO lose a lot of weight successfully on low carb diets, if they do it properly (watching their portions). Their cholesterol and blood pressure actually goes DOWN. You can eat higher calorie foods and still lose weight, if you stick to low carb rules. So... Please stop talking about the fat and calories. For the um-teenth time, they don't matter nearly as much on low carb diets.

Uh-huh. Keto diets are intentionally high fat. You can't reduce fat AND carbohydrate intake to nothingness. In other words, if you give up one macronutrient (fat), you have to make it up somewhere else (carbohydrates). Keto is the inverse. You reduce carbohydrates and therefore up fat intake to get the energy you need. Protein is the pivot.

If keto dieters didn't consume high levels of fat, they would waste away and feel sick. Fat is *must* to survive on so few carbohydrates.

So, if you're watching your fat, you're probably eating a lot of carbs, and this recipe isn't for you. If you're keto, this recipe is for you - but add in a fatty sauce.

I tried this tonight and it was delicious. The look, taste and texture was that of egg noodles after it was boiled. However, I found it easier to remove the parchment paper and slice the cheese into strips after taking it out of the fridge.

I'm so glad you posted this as I have been trying to find a low carb substitute for pasta. I'll have to try this. Being on a low carb diet is not fun when you want pasta and rice.

I made this and as expected the cheese melted and completely lost its "pasta"-like form into a melted ball of cheese when I put it in boiling water for 1 min
