The Way to Cook: Fried Raccoon and Sweet Potato

Here is my favorite way to prepare raccoon.
Like any wild game that contains glands, ensure they are removed.
Cut up in portions. The ribs and neck I do not keep.

The ingredients:
1 raccoon, cut up
1 TBS minced garlic
1 TBS Cajun seasoning
1/2 TBS salt
1/2 TBS cayenne
6 Bay leaves
Whole sweet potato, peeled

Boil the coon with the seasonings in enough water to cover it, until tender. A young coon will take about 1 hour.
Remove and set aside.
Add more water to the pot if needed and boil the whole peeled sweet
potato until tender.
Remove and cut into 1/2" slices.
In about 1" of vegetable oil, cook the coon about 5 minutes per side. Let drain on paper towels.
Do the same with the sliced sweet potato.
As soon as the sweet potato is done, sprinkle one side with sugar.
Enjoy.
