I think I found my new favorite orange chicken recipe

Made this and impressed my Asian freind I had over for dinner, made it as a inside joke we had and I eneded up making the best orange chicken me or him ever, delicious thank you!

My new fave recipe btw

-Chicken
chicken breast/thigh - 2 lbs
Eggs - 2
Baking soda - 2 tsp
Cornstarch - 2 cups
Water - 3/4 cup
Avocado oil - 2 tbsp

-Sauce
Dry chili - 10
Garlic - 10 cloves minced
Orange zest - 1/3 cup
Orange juice - 2 cups
Ketchup - 60g
Oyster sauce - 3 tbsp
Light soy sauce - 2 tbsp
White vinegar - 1/4 cup
Sugar - 100g
Avocado oil - 2-3 tbsp
Neutral oil for deep frying

-Cornstarch slurry
Cornstarch - 2 tbsp
Water- enough to dissolve

-prepare chicken. Cut into 1-2 inch cubes, and place into mixing bowl. Add the eggs and mix. Then add cornstarch, baking soda, water, and oil, and mix until we’ll combined. Refrigerate for at least 30 mins.
-get a large pot with neutral oil to 400F. Add the chicken one at a time in batches and fry for a minute, should start floating. Once fried let rest 10 mins.
-increase oil temp to 450F, and fry again in batches. This time for 40-50 seconds, getting golden. Set aside
-make the sauce. Get a pan on medium heat, add oil. Once shimmering, add chilis and garlic. Cook for 30 seconds, making sure not to burn. Add your orange juice. Then add ketchup, oyster sauce, and soy sauce. Bring to a simmer and reduce about a quarter of its volume. Then mix in cornstarch slurry, and cook about 2-3 mins, should get gloopy.
Next add the sugar and vinegar, and it should become a nice velvety texture. Throw in your chicken and toss to combine. Serve immediately, garnish with sesame seeds and eat with rice. Enjoy!

To whoever makes this recipe (unless you have a wok burner), use anything but carbon steel, this sauce will strip the seasoning

Remember to run your lemon/lime/orange with boiling water if you live in a cold climate country. Our citrus fruits are covered in wax to conserve them.

My childhood 😭 thank you for this kind sir! I grew up eating Chinese take out alot when my parents divorced. Both very work oriented and not good cooks. I've learned to cook for myself as a result and I believe I'll be making this soon. 💜

If the orange zest is added at the very end after the chicken has cooled slightly, it helps cut down on a lot of the bitter. Just a tip for those that may want their chicken to taste sweeter without adding additional sugar^
