My Sicilian father used to make this every sunday for breakfast! he used lemon juice instead of vinegar and it was out of this world! 🤤he would then drink the leftover whey like it was coffee😂

Ricotta, meaning "twice cooked", is made from leftover whey from rennet cheesemaking. This cheese is a kind of acid set cheese, colloquially called farmer's cheese, still good and a great quick homemade substitute for ricotta, and if blended/food processed with a touch of the strained liquid from the "ricotta" you get cream cheese😊

I lived in Boston’s Italian North End, and 1-2 weeks before Easter this giant silver milk truck pulls up next door and for the rest of the weekend all I could smell was warm sweet milk heating for what would eventually become ricotta. Amazing.

I’ve made this ricotta so many times, it’s foolproof and delicious. I’ve used it on toast with honey and in Chef John’s baked ziti recipe!! Goood stuff

This is paneer in India. Except you strain it, rinse the solid, closely tie it, leave it in the sink with heavy pan on the top.few hours later, cut it in cubes. It's ready to use.
