I’m italian, and my grandmother and my great grandmother told me a lot of stories from when they were young, 90 years ago. Here in italy at the time most of the countryside people were poor farmers and they couldn’t waste anything, so the women of the house started mixing everything that had to be eaten together creating A LOT of foods, that started diffusing between families, creating a great part of our food culture. In fact if you observe the ingredients you can see that most of them are cheeses, meat or vegetables that farmers were producing at home in their land, and that’s why we have so many different foods.

I also live in texas, and while you can get guanciale from some specialty stores a fantastic cheap sub for guanciale is cured pork jowl you can get from HEB as it's the same cut of meat.

I am an Italian (I mean straight of the boat, 1st gen immigrant) here in Philly and I use bacon as well. And vietnamese fish sauce and japanese panko formy own "pasta con colatura di alici". I am in america, therefore let's appreciate FUSION!
The garlic here IMHO makes sense for anyone wondering because it helps kinda simulating the curing of the guanciale. I don't use it tho. Parsley is not recommended, if you ask me.

As someone from the south that often uses bacon in her carbonara, I call this one "Italian bacon and eggs". Bacon, eggs, cheese, I also throw garlic in mine, and a starch. In a regular breakfast you get toast, here you get pasta. It's makes an awesome breakfast.
