A recipe from Michelin starred Chef Luciano Monosilio! The best carbonara recipe I've tried. Reducing the difficulty of controlling how much the sauce cooks by using steam so it cooks more gently and makes it easier to stop the eggs from overcooking

Recipe:
300g spaghetti
200g guanciale
4 medium egg yolks
50g Pecorino Romano cheese (to grate)
15g freshly ground pepper
Salt to taste

To add just before serving
Pecorino Romano cheese to taste

Good job. One advice: in Italy is almost mandatory to remove the external skinny part of guanciale: since it is in contact with air, it may contains fly eggs and other not healthy elements. I assure you it doesn't add any kind of flavour.

The main reason to shave off the outer layer of guanciale is that part is exposed to the air during curing for months. So, it oxidizes and many times has an off putting musty smell/ flavor. That skin does have the original spices/ pepper, but the nice part of the flavors have gone inside the meat. One can always simply add the requisite fresh ground pepper to the mix.

Bonus: Michelin starred boiled egg:
Take one egg, put it in boiling water for 5.5 minutes. Put the egg in ice water. Enjoy your michelin starred boiled egg.

You can cook the egg mixture over the boiling water first then add the pasta and pasta water rather than chancing overcooking the pasta.

Well this is the absolute standard for me. I always felt like the sauce should be creamy so i used enough eggs, a bit boiling water from the spaghetti and not too mich heat in the end

Fun fact: peccerino Romano and parmgiano reggiano are both low in or lactose free due to the aging process. So if you’re lactose intolerant you should be able to eat it still

To give it an elegant twist: lightly toast the black pepper, grind it using a pestle and pass through a sieve before adding to the egg cream :)
Also, you can portion like 2/3 pecorino and 1/3 parmigiano or grana padano, since the pecorino cheese is very salty. You’ll get a smoother flavor.

this is the standard recipe... what makes it michelin star? the finishing over boiling water? as long as the sauce doesn't break, the result is the same
