I made this with:

.5 lbs pasta
Bay leaves
Vegetable bouillon
6 oz uncared bacon
Parmesan
Cilantro (store was out of parsley)
Salt
Pepper
Crushed pepper flakes

The bay leaves go into the pasta water while it’s heating up. Once the water is hot I add the bouillon. Once the water comes to a boil, I add the pasta and cook per the box instructions. If it says 8-10 minutes, I do choose the lowest number (so 8 minutes).

Once the bacon is done rendering fat, I set it to the side and use tongs to toss all the pasta in the bacon fat. Season with salt and pepper to taste.

Add Parmesan, cilantro, and crushed pepper flakes to each bowl individually.

Favolosa. La mia versione preferita che ho scoperto di recente prevede mettere acqua di cottura già nella padella del guanciale dopo che lo si è cotto così da fare accumulare l'amido e poi risottare la pasta e aggiungere l'uovo a fuoco spento... La miglior carbonara che io abbia mai fatto, consiglio vivamente

I found out that when once I said to my gf (at the beginning of our dating) 'i bought guanciale, tomorrow we will have carbonara for dinner' that it was the moment she knew I was a keeper xD
