Ironically, they openly shit more on Brad's video of his kimchi, than he does at any point in his own video (indirectly or otherwise).

It's a part of his "It's Alive" video series where he does all sorts of pickling/fermenting stuff. He's just sharing his passion and knowledge for fermenting things, and kimchi just happens to be his next medium. He made pickles, he made his own hot sauce from scratch using fresh chilis, homemade kombucha, etc...

I agree with some of the criticism that perhaps a nod or proper credit and acknowledgement for where/how he came across his recipe would be appreciated, but at the end of the day it's his show - he does his thing. It wasn't done maliciously, and perhaps there wasn't proper deference made to the culture, but there was no outright disrespect of it either.

"Rooting for him to fail..." (9:30) Really? That seems quite petty and vindictive. What's wrong with him being "confident"? It's just his personality... As a Korean myself, I fully understand the cultural fixation on being humble, but that doesn't mean other people have to adhere to that same societal constraint.

Also, at 8:12 the mom in pink does give him some credit by adding "but I think he's doing a good job/alright." Perhaps she just threw that in at the end to be nice but there was no reason to leave that out of the caption.

The full caption should have read:
"This doesn't look particularly tasty but... I think he's doing good."

It was pretty classy of the mother to give a little credit for his effort. But of course leaving that out serves the somewhat self-righteous tone of this entire criticism video anyway.

If he made it a regular part of his show to bring on special guests/hosts to help explain a dish, and then made a purposeful decision to exclude a Korean expert just for this video, I would be inclined to agree with everyone else that seem to be so offended by it. But the flavor/tone of his video is exactly in line with *all the rest* of his videos - it's just him sharing his passion and knowledge with his audience. What's so wrong about that?

I'm normally a big traditionalist but there isn't one set recipe of kimchi and Brad was in no way disrespectful idk what she us talking about and he's not even that confident in it he just knows what he wants out of his kimchi ... I also feel like when he said the fish sauce was vietnamese she took it as he thought the recipe was vietnamese so that's on her lol

That thing about respect was pretty uncalled for.. he wasn't being disrespectful he was just making it his own way which is completely fine and nothing to shame him for

Brad’s a gift from god, literally the most humble host I’ve seen. Vivian... made me sad, I loved Hyera, she explained what she didn’t like but also said that everyone has their own ways of making it, her kimchi looked great.

She said a load of prententious stuff and "I know guys like him" bs, while the guy is very humble and passionate about fermentation. And he studies it! She just needed her little stage to show off a bit, having no idea on the process of making kimchi (unlike her mom, who has an idea but does not understand it probably)

The colour of his Kimchi actually has nothing to do with the fermentation. The reason it's dark because in the video he combined the glutinous rice mixture with the gochugaru while it was still hot, which makes it look cooked like Kimchi jjigae

The daughter is... I don’t know where she’s coming from. Respect? Brad’s video is the most respectful video in Korean food coming from a white person ive ever seen. There are videos out there of people using quinoa and cauliflower mixed with apple cider and calling it bibimbap. There’s some TRULY atrocious shit out there. Brad doesn’t try to say “this is authentic” and go completely off the rails, he doesn’t use, idk what would food network do, hot sauce and call it authentic. He makes kimchi and it’s kimchi. The episode was in keeping with the tone of the show and he does a good job of it

i just don't understand why any korean would be offended by brad and his kimchi video. at no point does he make any distasteful comment about Korea or Koreans, but rather he is appreciating a massive and integral part of Korean food culture. by no means is brad committing any degree of cultural appropriation.
i would be curious to hear from the creators of this channel what makes them think that it's okay to make these comments about a non-Korean man appreciating their rich food culture when they don't even appreciate it enough to learn how to make it. if i respect or love something i participate in it. the creators of this video don't seem interested in loving their food culture enough to learn more about it, but rather condemn others for trying. this video makes me sad. i truly hope this isn't what america is becoming.

I'm half Korean and I learned to make kimchi from my dad. After making it for so long, I developed my interpretation of what kimchi is it me. There's so many different techniques to making kimchi or to any dish in fact. Just because its not how you do it doesn't mean that its wrong. All I take from this video is that you pride yourself as being "Korean", while belittling and discriminating those that part-take in the culture. I flipped when that pretentious girl talks about respect and humility. Get a grasp of reality and snap out of that bubble you fool.

I prefer the moms' feedback, they're more humble and informational, and the way they share their stories makes me want to learn more about Korean culture. The kids, they have this air of haughtiness that don't lend well into learning and dialogue. But they're young, and impatient, and indignant, but I don't want to learn from someone like that.

One thing I've noticed over the years is that Brad, when he has access to someone who actually knows the fundamentals of the thing he's working on, will totally bring them onto the show and let them take the lead. See: Priya and her family with the yogurt video. I think if Christina Chaey had been working there at the time, she'd have had input on the video that he totally would have welcomed. A lot of the time the whole point seems to be less him showing The Way It Should Be Done, and more him showing people it's alright to experiment and even fail at fermentation, that having fermenting things in your life, and in your kitchen, isn't just for crunchy granola hippy people or something.

Hey my mom doesn't make kimchi this way so clearly this Brad guy is culturally appropriating our food. Says the girl who's never made kimchi with her mom ever. These two would find problems with maangchis recipe. Cultural purity is so strange.

Maybe you shouldn't give Brad all this crap about how he's doing it "wrong" because he's been professionally trained and using a different recipe. Of course Brad's recipe won't be as good or as traditional than the one that you've grown up having but there's something called expression.
