Apparently, if you freeze bread and then toast it to enjoy, it will have less of an effect on blood sugar. I also read that sourdough bread is better for one. I generally like 70% rye bread toasted. Toast seems more digestible to me.

Thanks Doc you're the best. I love bread. I bake my own sourdough but it messed up my glucose and cholesterol 😢. I ate too much lovely fresh bread daily with butter😢. I had perfect glucose until COVID and then I baked every other day 😂. I used rye and wholegrain brown flour but I ate it daily. Even the whole grain it affected me badly. I didn't lift weights I lifted the bread to my mouth😂
