Healthy Meals | Basics with Babish

Introducing my first episode of healthy meals on Basics! My advice is stick to lean proteins, green vegetables, and cut out as much sugar as you can. If you want to see more about health and fitness journey, watch the latest episode of Being with Babish here:

Ingredients & Shopping List
+ For the cashew cream:
Cashews (raw and unsalted)
Water

+ For the Overnight Oats (366 calories, 17g fat, 9g protein, 40g carbs per serving)

1/2 cup old fashioned oats
1/4 cup chia seeds
1/4 cup cashew cream, diluted with 3/4 cup water to make cashew milk
Vanilla Extract
Artificial sweetener of your choice
Pinch of kosher salt
Berries and mint for topping

+ For the Turkey Bacon BLT (357 calories, 9g fat, 36g protein, 37g carbs per serving)

4 slices low-fat turkey bacon
3 Tbsp cashew cream with sprinkles of mustard powder, cayenne pepper, garlic powder, onion powder, salt and pepper (to make "mayo")
1 heirloom tomato, thinly sliced
Sprouted whole wheat bread, lightly toasted
Spinach or butter lettuce

+ For the Cashew Chicken Salad (439 calories, 18g fat, 52g protein, 17g carbs per serving)

3 chicken breasts, butterflied and pounded to a uniform thin-ness
2-3 Tbsp cashew cream
1 apple, diced
4 green onions, minced
2-3 Tbsp minced parsley
Sprinkle of curry powder
Kosher salt and black pepper

+ For the Shrimp Pasta with Garlic and Basil (472 calories, 14g fat, 30g protein, 42g carbs per serving)

4 ounces red lentil pasta
2 Tablespoons olive oil, divided
1/2 pound shrimp, shelled and deveined (shells optionally reserved)
1 shallot, finely minced
3 cloves garlic, crushed
1 tsp dried oregano
8 ounces cherry tomatoes, halved
1/4 cup packed basil leaves, minced
1/4 cup dry white wine (optional)
1/4 cup cashew cream
1/4 cup packed parsley, minced

Special Equipment:
High powered blender (for cashew cream)

That poaching chicken tip was GOOOLD. I'd love to see a whole episode of just general and everyday tips like that. Tips that are often hidden in recipes but carry over to pretty much all recipes.

*PSA for those that are allergic to dairy alternatives (nuts/soy)!*
You can substitute the cashew cream for dairy yogurt. Any plain kind will do since yogurt actually has a decent amount of protein.
For the pasta, if you don't wanna use a tomato based sauce, you can just use a small amount of oil (olive oil is fine) instead from your shrimp.
