Important piece of info that was left out: Mix the pasta with the egg yolk/pecorino mix OFF the heat. The residual heat of the pasta will cook the yolks enough for safe consumption. If you have your heat on too high, the eggs will overcook.

Adam Ragusea had a good tip on temperature control to prevent egg scrambling. When you put the spaghetti into the pan, let the sizzling of the residual pasta water cease before you add the egg cheese mixture.
