Donal, I am basing my cooking on your recipes. I love your pasta recipes! They're simple, simple, simple. As a native Serbian, pasta except bolognese is not eaten that often, and I bet 2/3 of my fellow countrymen have never even heart of puttanesca or arrabbiata, or any other fancy type. I am truly thankful to you for making these highly educating, highly entertaining videos for us, the amateur chefs.

I am Italian. Although I am, what I consider to be a pretty good cook...I have never mastered Pasta Carbonara, which is one on my favorites (yes scrambled eggs). I think your method is my answer. Your pronunciation of the dish is perfetto. MILLE GRAZIE!! See...we Italians can say nice things 😉

I never understand those that use cream in a carbonara. So many recipes I see use it, and it probably annoys me more than it should do lol. Nice recipe Donal, I make mine pretty much the same way. If you can get hold of some cured pigs cheek (guanciale) that stuff is heaven in a carbonara.

I'm always amazed how the egg yolks create a creamy and rich sauce as if out of thin air. this recipe looks amazing and I want to try it. the only other time I made carbonara was Nigella Lawson's version which interestingly enough used some white wine to deglaze the pan dripping and also had freshly ground pepper corn on top, with some cream for sumptuousness and gorgeous creamy texture. her recipe was I. N. S. A. N.E.L.Y delicious and I am a convert for all things carbonate!
