Just put a layer of Mayo only on the parts that will touch the pan. It'll disappear after searing.

Well seeing as mayonnaise is mostly emulsified oil, that makes sense once it’s cooked you don’t taste it much, if at all.
Whereas butter is fats separated from milk.
It’s actually a really popular thing to toast bread or buns with mayo versus butter or regular oil.

Roel, you should've seared the fat part of the steak too. So there would be less mayonnaise residue and the fat catches more flavor. Great video as always though.

I always coat in mayo before indirect cooking. The SPG sticks better, and the mayo survives well enough to provide an excellent sear afterwards. I do use a weed burning propane wand-torch (flame thrower) to do the sear, but the result should be similar.

We used to put Ranch dressing on "cheap" steaks and put them under the broiler until brown and bubbly. The dressing would be more like a cheesy consistency and get stringy like mozzarella. Delicious.

I've been doing this for a long time and it really does make a difference you dont have to marinate just apply and grill. You will get more flare ups obviously but people will wonder forever what your secret it

At 3:57 I am always aware of the bottom of bowls or buckets getting put on cutting boards...that was on the ground a few seconds ago. What if someone's shoes was recently in a wet and grimy gas station bathroom, and the bottom of that bucket was put in the same spot as those shoes have been, then he put the bucket on the cutting board.

I've done this for many years. Salt and pepper as usual, then spread on the mayo. Use just enough to cover only the sides of the steak, not the edges. As you said, you don't really taste a strong mayo flavor. The oil gives a good seal to the meat and the egg, a nice crust. When the steak is done, there will be no obvious mayo left on it. There may be a slight hint of lemon taste, depending on the brand of mayo, but that's about it.

Ive used mayonnaise instead of butter on bread when grilling it like on the outside of a grilled cheese, patty melt, or for toasting the inside of a bun on a griddle. it works incredibly well.

No Chef would ever sear a Steak with Butter. :P You know whats happening to Butter in high Heat ^^. The Sear comes first, and then they add the Butter and baist the Steak with Butter & Aroma's like Herbs or Garlic.

Best tasting Salmon Steak on the barbecue I ever tasted was coated with Miracle-Whip ...what happens is all the sugars in it are lost in the cooking process and the salmon had a thin crusted layer with incredibly moist and tasty flesh inside ... never thought you could do that with beef ..gotta try this...

I coat thick pork chops in mayo then bread them...
Bake in oven ...comes out great.. will have to try this on a steak on the grill.

beautiful meat! i would have used Dale's sauce in a baggie overnight then cooked it over charcoal adding butter to top side - flipped once add butter to this topside. Serve with baked potato started 30 minutes ahead again cut in parts to enhance flavor and cooking. nothing beats all this with baked apple cored and cooked with butter and cinnamon - 45 minutes to serve after slight cooling.

What if you coat in a mayo butter mixture? OR cook with mayo then put a pad of butter on it after the flip?

The Mayo trick works great on turkey I do it each year on Thanksgiving and it comes out nice and brown and juicy, however I think he should have used a spoon to scoop out the Mayo and spread the proper amount on the steak . He contaminated the rest of the Mayo unless he was cooking a lot more steaks . Also for the turkey I cook a 25# bird and it only takes about a medium size jar I also put the bird in a pan and use two grocery size brown bags to slide the pan in I also cook the dressing separately to cut down on cooking time . TRY IT !
