Crème Catalana

Crema Catalana comes from Catalunia obviously.
5 egg yolks
5 dl half and half creme and milk
cinnamon stick
some orange zest
vanilla of taste
Raw sugar

Heat the milk and creme with the flavours (zest and cinnamon stick)
Let cool a bit. Meanwhile whip sugar and egg yolks. Mix and heat. If it doesn´t get thick enough, throw it into the oven on 150 degrees tils it thicken (maximum 40 min) Cool it in the fridge. Sprinkle raw sugar over it an burn it of til it melts. It will become a crispy surface.
