My FAVORITE EASY VEGAN MEAL!

You know I love to get into a groove, and this has been my favorite meal lately. It requires no planning, no thinking... Just chop up whatever you've got in the fridge, pick a couple starches like potatoes and beans, add some spices and you're ready to eat. Don't get stuck on the exact ingredients here, the point is to form a process of cooking that is simple and delicious!

For anyone who likes following a written recipe, I jotted down the steps from this video.

Ingredients:
6 small - medium gold potatoes cubed
5 roma tomatoes, diced
1 yellow onion, diced
1 red bell pepper, diced
6 baby bella mushrooms, diced
2 jalapeños, diced (optional)
1 lighter colored spicy peppers from Latin market (optional)
2 zucchinis, cut into quarter inch pieces
1 bunch kale, destemmed and roughly chopped
1 tbsp. chili powder
1/2 tsp black pepper
1/2 tsp cumin
1/2 - 1 tsp oregano
1/2 - 1 tsp marjoram
4-6 cloves garlic, minced
1 can black beans, drained

Toppings:
6 olives, chopped
1 avocado, diced
1/2 lime

Cooking Instructions
1. add potatoes to pot with water and boil for 10 minutes or until fork tender.
2. add onion, peppers, mushrooms to pot and sauté until soft (about 3 minutes).
3. add spices to pan with veggies and sauté for 2 more minutes
4. Add potatoes, beans, tomatoes, and zucchini to pan with veggies. Stir to combine and cook for a minute or two
5. Add kale, stir until wilted and remove pan from heat.
6. Plate up your meal and top with avocado, olives, lime juice and any other favorite topping

The olive, the lime, the avocado and tomato are all fruits. If you find the olives to be too salty, you could rinse them in a strainer. This is an excellent video !

Wow, this is basically how I meal prep lunch. Mushroom, onion, carrot, celery, some sort of green vegetable, some sort of root vegetable, canned diced tomato, and cooked beans all served on top of grain. I can't resist adding a bit of soy sauce though. So simple and so many vegetables. Usually 500 calories altogether.

I love this, it's pretty much what I eat every day. Sometimes I use rice instead of potatoes, and sometimes I lay down a bed of mashed potatoes or a rice/quinoa mix and then pour my vegetables on top.

I really enjoyed this video! I was vegan for a year and now WFPB and SOS free for the past 6 months. Learning to cook this way is challenging but you make it so simple. I have to stop over thinking things and just go with the flow and start throwing things together and have fun with it. Thanks for sharing!

I love love this show because the recipes are actually doable with the foods as a life long Lacto-Ovo-Vegetarian I keep in my kitchen! I make all these there so good! And I enjoy watching. Can't wait to buy the cookbooks.

I do the same thing only I just cook the potatoes. I prefer everything raw. Then I throw in some cashew dressing. Yummy!!
