I have never seen someone make soup dumplings so it’s crazy to know that they cool the soup into a gelatin form to mix with the fillings

As an Taiwanese I had never seen someone done the recipe as accurate as you did, extremely well done!!! We surely transform the soup into a gelatin form（the ingredients in the bone will relase after a long period of braising） to make sure we can put it inside the dumpling properly.
