For anyone wondering what they actually do: they mix the soup with gelatin and let it harden, then after it's hardened they chop it up and mix it with the rest of the filling

Real explanation: they use rich soups, the kind that gets like jelly if left in the fridge. They cut it and wrap it in the dumpling, then when you cook it the soup melts.

An alternative method if you're making them at home is to put your soup in an ice tray, wrap them tight then keep the dumplings frozen until use.

Flr thos who dont know, when you make a very rich soup base, it becomes a jelly-like texture and they steam it to turn it back into the soup. Or they add gelatin and take the same steps

Genuinely tho, anyone who wants to know, soups with a lot of bones, cartilage, etc usually have gelatin in them already! If not, add gelatin, and let the soup firm up in the fridge! Once it’s jelly, fold it up in the dumpling!

How to put soup dumplings but with chicken ings

To put soup into the dumplings, you will need to make aspic, or congealed meat broth. As you might have noticed, if you make chicken broth or pork broth at home, the soup will congeal into a gelatinous texture once chilled. Xiao Long Bao uses the same technique, only it makes the gelatin even thicker, so it forms a jelly-like texture that you can cut into small pieces that stay solid while you work them into dumplings. What you do is wrap the jelly into the dumpling along with the rest of the filling ingredients. Once cooked, the gelatin will melt down and become the soupy part of the filling.

Here’s also another way how people get soup in their soup dumplings, when they are making the dumplings they fill it with this jelly so when you steam them it melts into soup( i don’t know a lot about it but I think this is how they do it)

how to ACTUALLY make it for those of you that wanna know: the soup is actually a gelatin before hand and when the gelatin is melted during steaming it turns into soup so while you mix your meat and veg up for the filling, cut your gelatin into tiny cubes and add it in the mix so when it gets steamed, it turns into your delicious souo
