Ingredients -

1 - Brown Onion, Diced
4 - Cloves of Garlic, Sliced
8 - Rashers of Bacon, Diced
1Tbs - Parsley, Chopped
1Tbs - Oregano, Chopped
1 Tsp - Thyme, Chopped
1 - Egg Yolk
400ml - Double Cream
250g - Spaghetti
1 Tbs - Salted Butter
1/2 cup - Grated Parmesan

This channel should have way more views and subscribers. Chef Jack is a hidden treasure on youtube. The little tips and knowledge he imparts are of a knowledgeable chef. The camera angle and closeness is just right. I can see exactly how he prepares the food, IE: his cutting methods. And the no non-sense approach of going straight to the teaching of the recipe is refreshing and badly needed. We don't need to hear unnecessary stories or jokes like in other cooking channels. The man of few words, Chef Jack Ovens is ironically a powerhouse of cooking knowledge dispensary.

For all people who say this is not a "real" carbonara: it is important to remember that back then dishes were created to a budget. Pizza for example was invented by peasants who had nothing but some dough, tomatoes and goat cheese and they wanted something warm and tasty to feed their family. There is nothing wrong with improving an old dish, especially when it is made clear that it is not the original version. If you are insulted by Chef Ovens putting cream and garlic into carbonara, then perhaps you should consider not cooking your meat because the original cavemen ate it raw.

I used to live in the Languedoc region of France and pasta carbonara was on the menu in every restaurant we went to. It was made this way but it was served with the whole egg yolk in the center of the mound of pasta and you’d do the mixing yourself. I now live in the Nouvelle Aquitaine region and I’ve never seen it on a menu. Thank you so much for providing this recipe. I’ve been trying to reproduce it for years and I never got it right. This will be tomorrow's dinner!

I tried this last night and it blew me away. I used to do carbonara the traditional way but it never quite was the taste of the carbonara served in nearby joints.

It’s the non traditional way of course but I like this one way better. The lightly caramelized hints of the onion, the heavy cream is just excellent. I used garlic and herb butter at the beginning too, and added mushrooms. It’s the most delicious thing I’ve made in my kitchen thus far!

my dad bought some ham that was due to go out of date tomorrow without realising he was about to bin it and I was like no we can cook something with it, I have never made carbonara but this recipe and clear instructions really helped turned out pretty good for my first thank :) ill be sure to check out of your stuff

Thanks for this, the internet is swamped with 'foodies' aggresively lecturing us on the traditional method. I cook both and tbh, the one with cream is tatsier. Nice job!

I love traditional carbonara but I was craving one with cream and bacon today! Also I ate two eggs this morning and that’s generally my limit of eggs per day. At least that’s what our local doctors recommend.

It seems like some people don't understand what NON TRADITIONAL their negative comments.

It's interesting to watch a chef take a traditional dish and make it non-traditional. I mean, how many videos can you watch of traditional Carbonara being made?! It's all the same darn ting!! 🤦🏻‍♀️
