My mom soak the shitake for a very extended period (more than 1 hour, sometimes she soak it before going to work and it will be 5~6 hours), no wonder the shitake never taste as good

I did not know hot to reconstituate them so I soaked them in water for a at least 30 mnt and repeat Twi more times then I stir-fry them with other vegetables and spices garlic onion paprika all in olive oil and they were deli soups

I find that even an hour of soaking them isn’t enough. I usually leave them in warm water for like 3 hours. When I first started using them, they would still be somewhat tough after not having soaked long enough.
