One of my favorite uses of jam is making ice cream. After you've placed your cream mixture in the freezer (machine used to freeze the cream, not the refrigerator), and the mixture is about half way done, add about a cup (per quart of cream) of really cold jam to the mix. Result is yummy creamy and fruity ice cream. Pectin also keep ice crystals from forming so final product is creamy, not icey. NOTE: Making ice cream this way will result is soft texture even after days in the freezer. I like fruity ice cream this way better than hard.
P.S. You can also use store bought jam or preserves if you don't make your own. Result is the same.

Here in Finland we just use a special sugar calledHillosokeri (literally means Jamsugar) aka gelling sugar to make jam since it also contains pectin and citric acid as a preservative. Just boil the hell outta your berry or fruit of your choosing, and add the sugar, refrigerate it and boom! Jam

Edit.Its also healthier since it contains less sugar than ordinary sugar.

as an absolute sugar addict, i flip the ratio of the fruit and sugar. it does 2 thing:
-give you diabetes
-keeps the jam fresh for longer (bacteria cant live in environments w too much glucose)
