I want to tell everyone that I reached out to Dr. Vega here in Mexico (I live in MExico) and he has been excellent in my health team. I use Dr. Vega to evaluate my medical opinions from other doctors here in Mexico and after a few appointments with him I can say that I have complete confidence in him. Not a plug or promotion, just an American living in Mexico's experience

Regarding cooking garbanzos. . Soak the beans overnight or several hours first. Drain the water off, then cover with fresh water. Then pressure cook for 45min. It's so easy! I have done it for over 40 years. My children grew up with the beans and we made many delicious recipes including hummus, also a sort of mild chili dish with coconut, and baked the cooked beans with a little oil and garam masala. They are crunchy and delicious. Also sprinkle on a green salad. Or make a 4 or 5 bean salad. After my children grew up they asked me for some of those recipes. You can find many garbanzo recipes in Indian cookbooks or online. So happy to hear that they keep the blood sugar level even. Since developing type 2 I had to give up beans, and I love them. I will try them again soon!

In India, we soak all beans overnight and discard the water, before cooking them. This reduces gastric distress.
In South India, we ferment lentil-rice dough, which alters their structure, before making crepes, (dosa) and steamed dumplings (idli) which taste great with coconut chutney and or lentil soup.
I do not eat meat fish or poultry. but I do eat high quality eggs and and supplement with fish oil for EPA and DHA.
I supplemented with Flax Seed oil for almost 30 years, but it did not help me very much, probably because of the amount of Omega-6 in my diet. I do not use any refined oils.
Strictly, ghee, butter, coconut oil and MCT, and EVO.
However since going keto (I may have stretched the definition a bit), and supplementing with Fish oil, my Omega -3 Index is now 11% (!!!)
My Fasting Insulin is 6. My HOMA-IR is 1.3 in just 2 years.
I have never even closely approached these numbers before taking 3g of EPA/DHA daily.
I also take 5mg of MK-4, and nattokinase.

BTW, I have gotten used to eating Natto, which Dr. Brewer still (?) finds yucky!
Frozen Japanese made Natto is sold at many Korean supermarkets.

I am 75. I have a strict diet and exercise regime, with IF of 16 hours.
I used to way 245 lb 10 years ago, perhaps from eating all sorts of junk food since I moved to the US.
My job required me to travel a lot. Now do not eat out if I can help it.
Started to lose weight and now stable at 145 lb.

Just do whatever works for you. I started carnivore about 2 years ago and had great results, except it didn't resolve GI issues. I consulted a GI doctor and he told me he supported my diet (surprised me!) but he suggested I try fiber supplements. It helped a ton.

I believe there is nothing wrong with having variety of foods but in moderation. Not all fruits, veggies or meats are created equal. I also believe we eat way too much since the food is so accessible nowadays especially processed food. Our gut processes carbs so fast that less than an hour later we feel hungry again. Meats and fats take much longer to digest, so this notion that meats rot in our stomach is just a baloney, imo. Meats take much longer to be processed so our gut doesn’t signal the brain that our stomach is empty so we feel satiated for much longer, and in turn we wont be reaching for that snack like if we had a carb meal. Also, the insulin won’t spike as high and tumble down as fast. It will be gradual. I think it is very important to eat variety with emphasis on meat being the largest portion on the plate followed by a handful of veggies, even little potato, rice, or pasta would be good. Unfortunately many can’t eat this way and they engorge themselves on whatever is served, especially carbs in form of pasta, potatoes and rice.

Hola from NCal. Just had a cardiac event(cardiac Cath) revealing diastolic heart failure at the hospital with severe angina & shocked my blood pressure was so high, as I have been going to numerous drs this last year, once every 2 weeks, skin, family, neurologist, psychiatrist and my blood pressure was never more than 135/80, 120/80. No white coast syndrome here but my cholesterol hit the charts at 242 but always been high for over 25 years. I am so confused on what to eat, scared to leave the house and dread researching cardiac health, stents, by-pass, etc. Guess age(78) has caught up with me? Thanks, gracias 4all.

Thank you so much. I learned a lot. I’ll include those 5 foods in my diet. I usually eat legumes anyway. I soak them overnight, then boil them for 10 minutes and discard the water. Then cook them for about 45 minutes. If the beans or chickpeas don’t soften, that means that they were too old. The will never soften.

My mother used to give us Chickpeas and used a pressure cooker. I never liked them. - 4 out of 5 is okay. Broccoli vs Broccoli sprouts, is there a significant difference? - I had IBS for 5 years. I cut cabs in 1/2 4 months ago and 3/4 of sugar 6 months and symptoms are now 95% gone. Now I eat broccoli, cabbage and baby carrots (snacks), red peppers and onions. IBS issues have not return.

I will stick with carnivore for the most part but I have a small black raspberry bush and I don't think that an occasional handful of them directly from the vine will be much of a problem.

Cooking dried beans to perfection in no time with no pressure cooker is simple all you have to do is soak them and clean water covered water overnight and when you cook them the next day they will already be soft because they started going into the sprouting process if you rinse them and leave them in a jar and put them in some dirt you can also make sprouts with them at this point

I prefer blueberries over raspberries because it is lower in oxalates and also doesn't impact blood sugar levels.

Perfect beans from dried beans recipe, soak beans overnight in water . That breaks down the being and starts it to the sprouting process so it's more nutrient it has no plant toxins and it Cooks in very little time it's almost edible at that point

Don't salt dry peas and beans until AFTER cooking or they will remain hard. I put beans into the pressure cooker with a lot ofr water, bring to pressure for about 20, inutes, allow to fully hydrate for a few hours or overnight, rinse, add just enough water to cove the beansr, then pressure cook again for about an hour. The first cooking and rinsing helps to eliminate lectin proteins that cause inflammation..
