Hey Kenji, I just want to say, please keep just doing you.

I commented semi-tongue-in-cheek a few weeks ago about you looking really fit, and you responded that you were in fact working out. Since then I’ve seen the alcohol detox post and I’m really proud to see you going through a public self-improvement kick. I don’t want to ramble on, but you’re making a visible difference to yourself and to the greater public. Plus the humour in this video was on-point; off the cuff, genuine humour that had me quietly chuckling away throughout the video. All whilst delivering top-quality, somewhat-objective cooking content. And I’ve never mentioned it but the dedication to gender diversity at the end of each and every video is exemplary.

You are a top-shelf human and I appreciate you tremendously.

I love how Kenji is not too proud to admit he’s still learning how to crack eggs! He also almost always gives a shout out to another chef in his videos, either someone he worked with or learned from. This and the humor is what sets Kenji apart. Keep it up my friend!

French toast is all personal preference, but I like an overnight fresh challah soak. It practically disintegrates in the egg milk, but when you cook it, the egg binds together and causes it to reform. Great if you want max custard and min bread flavor /texture

Mandatory french lesson incoming: "pain perdu" would actually translate to "lost bread", not forgotten bread, though the connotation is very similar. Bonus fact, in Quebec it is called "pain doré", meaning "golden bread"
