Case point:
Potatoes are one of the most satisfying foods you can eat
McDonalds french fries have been literally ENGINEERED to have the perfect texture, taste and ratio of carbs/fat/salt to light up our brains so we want to eat more.
Doesn't mean you can't enjoy treats, but if you fail with calorie counting because you're hungry all the time ~ prioritizing whole foods & strength training will help you lose weight.

I’ve gained what I lost (30lbs+) but I find it hard now with working two jobs. In my mind I want to work out & eat better but when I come home my body wants to lay down & just eat something quick and not cook
