For an "enchilada casserole", my late mother would say, use corn tortillas. If you use flour tortillas it turns the dish into a "burrito casserole". I find the tortilla method turns out to be crispy on the edges and soggy in the middle and bottom and have less flavor than with corn tortillas. Using corn tortillas, a lil tip, spread a little of the mixture on bottom of pan before layering the corn tortillas. I put cheese on top of each layer, as well. So I do corn tortilla, chicken mix, cheese, corn tortilla, etc. HUGE TIP, if you can get a hold of some New Mexican green chili, preferably Hatch, it will make all the difference.

Corn tortillas are the only one's I use to cook with because it just packs in so much flavor. And not soggy.

Hi Paula, my mother in-law gave me this recipe way back in the day. It was called Chicken Chalupas. We used huge can cream of chicken soup and 16 oz sour cream and 3 to 4 cups of chicken and 2 cups cheese. Mixed all sour cream, soup, green chilies and cheese place in bowl, split in half. Mix other half with chicken, stuff like burrito in flour shells, top with the other half mixture of the left over sour cream, soup mixture and add green onions and paprika on top. But I think this would be good with 8 oz of sour cream instead of 16 oz. very rich and filling and so good! Take care💖👍💖

Looks delicious! I make something similar but we bump up the flavor because we LOVE spicy. I add ancho chili powder, chipotle chili powder, oregano & smoked paprika. I also add roasted poblanos, garlic, onions & mushrooms. If I end up using flour tortillas I ALWAYS toast them up first, on a comal or in a frying pan to get some char on them & take off that "raw" taste. Some black beans, cilantro....ooooh I'm HUNGRY now!

I've seen this made with enchilada sauce added also to make it creamier, and the tortillas cut to smaller pieces and stirred in to the mixture. Either way looks yummy.

I love mexican food and live in New Mexico. Chicken enchiladas to us is about the green chilli and corn tortillas. So many ways to make it. I use green chili enchilada sauce instead of chicken soup but still add a little for the kids. Its incredible with cream cheese in it too. Black olives and onion bits at the top. Yum

I've made recipes using tortillas as a base, the key to keeping the tortillas from slipping around is, coat the pan with butter, not cooking spray, .

No!No! Not flour tortillas! Use corn tortillas!! The flour tortillas will get soggy and be like dough!! And the taste of the corn tortillas is incredible in this recipe!!
